In honor of Summer, we decided we wanted to make a summer dessert. My daughter & I thought about it and wondered if we wanted to make a dessert that had summery flavors or that was decorated like summer. We could have done both but we decided to make a fun cake & decorate it! And that’s where our Summertime Beach Cake comes in!
Ashlyn and I wanted to use Duncan Hines Cotton Candy Flavor Mix but the boys vetoed it! So, we used white frosting & added blue food coloring until we got the right shade of blue.
When it came to decorating the cake, we both racked our brains trying to think of the perfect things to add. We started at Target but couldn’t really find anything so we headed to the mall & went into Sweet Factory. Looking through all the bins of candy was like Heaven on Earth! We finally came across red & white gummy bears that made for great sunburnt & pasty white bears (which are just like me!) We figured the pasty white bears would hide under the umbrellas that we snacked from the wine aisle at the grocery store and lay on pieces of the sour rainbow belts (towels). We also used the belts to make surfboards for the more adventurous bears. Crushed graham crackers made our beach & little candy fishies swam out with the surfers.
We had a ton of fun making our cake & can’t wait to make another themed cake. What theme cake/cupcakes should we do next?

Too cute! Love all the details – the sun-burnt bear is great! The sandy beach and umbrellas make me want to be at the beach, too. It looks great and tastes great, too, I bet. Next, you could do Fourth of July or Back to School or go funky by celebrating July as National Ice Cream Month and National Hot Dog Month…have an ice cream cake with hot dog decorations.

This is awesome. I love the sunbathing bears! I just made a koolaid pie this past weekend and it made me feel like a kid again. I think we will give your idea a go with my boys. Our cake will probably include lots of gummy bugs in addition to bears haha.

I’m dying, this is so cute! Not sure if I like to sunburnt bears or the surfing bears the most. I think you need to do a series with these bears for each season. They’re so cute! -Monika

That’s a cute idea. My kids are grown up so I don’t do stuff like that anymore. I remember making a cute cookie monster cake way back when.

I’ve made cupcake versions of this and they were a hit. I love the cake idea though because it gives you more room to “play” around. On mine I used Teddy Grahams though. And I also used Gummy Lifesavers as little floaties and stuck the teddy’s inside of them. And to give my water more depth I dropped a few drops of blue food coloring on the already frosted cupcake and used a toothpick to make swirls.
