Summertime always means a lot of hanging out, lazy days, heading to the beach, exploring San Diego and just having a lot of fun. Even on my best days, I am not great at planning meals so I really like to have easy, fresh items on hand so that I can whip something together in a pinch.
One of my favorite things to have on hand is Foster Farms® Refrigerated Chicken Breast Strips. I love these strips because not only are they fresh, fully-cooked and ready to serve, you can also use them in so many things from sandwiches, salads, wraps and so many more things. The last thing I want to do in the middle of Summer is turn on my oven to bake some chicken but having these strips is a great way to fix fresh meals for my family, it’s a quick and easy way to get in some protein and there are no added hormones or steroids.
One of my favorite recipes EVER are the goat cheese stuffed peppadew peppers that I made recently. I would honestly eat them every meal, every day if I could. The thing is that they take a while to make so I decided to take those same ingredients and create something that would taste just as great but in much less time.
A local health food store has the best pitas I’ve ever eaten so I make sure to always buy them there. They’re perfect for making simple, quick & tasty lunches in the Summer. This time, I added Foster Farms® Refrigerated Chicken Breast Strips, peppadew peppers, herbed goat cheese, some spinach (or greens of your choice) and a balsamic glaze. It’s a simple dish that tastes like something you’d order at a restaurant but without the high prices and you can make it any time you want it!
Wrap the pita in a paper towel and warm it in the microwave for about 15 seconds. This makes it a lot easier to bend the pita around the chicken and peppers inside. Add a thin layer of herb goat cheese (there are other flavors but this one is my favorite). You can always add more but I start with a thin later because goat cheese has a strong, but delicious, taste.
Layer in your Foster Farms® Refrigerated Chicken Breast Strips, sliced peppadew peppers (rinse them off first, as they are packed in oil), greens and drizzle with some balsamic glaze. I bought mine at a local health food store and I could honestly eat it on just about everything. That’s it, you’re good to go!
